Blueberry Muffins:

½ cup butter,  softened

1 cup sugar

2 eggs

1 tsp. vanilla

2 tsps. Baking powder

¼ tsp. salt

2 ½ cups blueberries (mash half with fork), can use frozen blueberries, but drain excess liquid when thawed.

2 cups flour

½ cup milk

1 tbsp. sugar mixed with ¼ tsp. cinnamon

In  a bowl beat butter until creamy.  Beat in the sugar until fluffy.  Beat in the eggs, vanilla, baking powder and salt.

Mix in the mashed blueberries.

Alternate folding in the flour and milk.  Fold in remaining berries that have not been mashed.

Place batter  in paper lined muffin tins. Sprinkle cinnamon/sugar on each muffin.

Bake muffins in a 375 degree oven for 25 minutes or until golden brown.  Let muffins cool.
